Rarity is Engineer cuz she has the skills from being a fashion designer. It takes a lot of structural engineering knowledge to make a disco collar stand up! And balancing huge gems on material without it drooping or losing shape!
Applejack is Soldier because she can even motivate Rarity into doing stuff.
Derpy is pyro cuz her derp eyes look awesome in that mask! And i'm sure she would be great with a flamethrower! (I just don't wanna be anywhere within range)
Pinkie Pie is Spy because of her unique physics-defying ability to pop up anywhere.
The others are almost self-explanatory,
Big Mac as Heavy cuz he's a hoss.
Fluttershy as medic, since she's always nursing sick animals and such.
Rainbow Dash as Scout - because of her recon work in "Over a Barrel".
Twilight Sparkle as Sniper. (Just because)
And Vinyl Scratch/DJ Pon3 as Demoman, because of this video, [link]
Some people have disagreed with me about the assignment of the classes, however my reasoning is this:
